From մած (mac, “glued together, curdled”) + -ուն (-un). Compare how Persian ماست (māst, “coagulated milk, yoghurt”) is derived from ماسیدن (māsīdan, “to coagulate”), Turkish yoğurt, from yoğurmak (“to plasticize, knead”).
