From the earlier uncontracted form ܓܒܢܬܐ (gəḇentā), from the root ܓ-ܒ-ܢ (ɡ-b-n) related to coagulating. Compare Arabic جُبْن (jubn) and Hebrew גְּבִינָה (gəḇînâ).
