Compound of お (o-, honorific prefix) + 新香 (shinkō or shinko, literally “new fragrance”, as these were traditionally only pickled for a few days). Usage appears to be shifting now from meaning specifically lightly pickled vegetables, to meaning pickled vegetables in general.
- (lightly pickled vegetables): 新香 (しんこ, shinko), お香香 (おこうこう, okōkō; おこうこ, okōko), 香の物 (こうのもの, kō no mono), 浅漬け (あさづけ, asazuke)
- (pickles in general): 漬け物, 漬物 (つけもの, tsukemono)
