Haitian Creole

Haitian Creole is dead simple to learn if you first know some French. I would encourage anyone interested to read the w:Haitian Creole language article on Wikipedia first, (inaccurate though it may be,) then move on to the Haitian Creole Wikipedia to get acquainted with some more vocabulary, then study the Creole Bible (harder to understand) or some other thing in Creole. There is one native Creole speaker on the English Wiktionary, and that's Masterches (talkcontribs), though he is not on this wiki a lot.
