     [...] lorsque le brigadier est levé & qu’il jouit complètement de son intelligence, la première chose sur laquelle il doit porter son regard, c’est le levain ; sortir ensuite pour s’assurer de l’état du ciel ; voir après cela le baromètre ; visiter la chaudière en hiver ; faire apporter la farine ; construire dans le pétrin une fontaine si elle n’étoit pas déjà faite ; enfin ne rien négliger de tous ces détails préliminaires, qui en apparence semblent être fort peu de chose, mais qui dans le fait influent sensiblement sur le succès du pétrissage et de la fournée [...]
