Possibly from a non-IE substrate doublet *asetr-, *str-. Alternatively from Proto-Indo-European *sr̥Hyón-. Possible cognate with Proto-Balto-Slavic *eśetras (“sturgeon”), Late Latin hapax fariō (= ſariō (“salmon trout”)).
