Etymology

So called because it reverses the usual order of cooking.

reverse-sear (third-person singular simple present reverse-sears, present participle reverse-searing, simple past and past participle reverse-seared)

1. (transitive, cooking) To cook (a steak etc.) at low heat until the centre reaches the desired temperature, then cook the outside at high temperature to sear it.
