I think it may be possible to interpret "the ersatz" in the Byatt (2003) quotation as a fused-head construction standing in for "the ersatz [magic]", in which case it's not a bona fide noun. E.g. you could probably replace "ersatz" with "imitative" or "inauthentic". I'm not sure this analysis is right, however.
