[edit]Ultimately from Italian articiocco, itself from Occitan artichaut, from Old Spanish alcarchofa, from Andalusian Arabic الْخَرْشُوف (al-ẖaršúf), from Arabic الْخُرْشُوف (al-ḵuršūf).
Probably entered Hebrew through Russian артишок (artišok) and Yiddish אַרטישאָק (artishok).
