Old French "soit" was /sɔi̯θ/ if I'm not mistaken, so the /f/ would be merely an occasional instance of "th-fronting". Of course, it's possible that the desire to avoid homophony reinforced this development, but right now it's sounds as though the "f" had just been added at random.
