Either (1) from *gjir- (as in Arvanitic ngjiris ‘to make curdle’) + collective -zë, from Proto-Indo-European *sr̥djo ‘whey’ (compare Latin serum, Greek ορός (orós)); or (2) from *gjin + -zë, from Proto-Albanian *sina, from Proto-Indo-European *s(H)i-n- (compare English sinew, Latvian pasainis ‘string’, Ancient Greek ἱμᾱς (himās) ‘strap, thong’), referring to the tying of the rennet bag in which the cheese is made.
