Borrowed from Classical Persian سرکه (sirka), from Middle Persian [Term?] (/⁠sarkāw⁠/, vinegar), or a Turkic borrowing (Proto-Turkic *sirke (vinegar) > Azerbaijani sirkə, Bashkir һеркә (herkə), Chuvash шарак (šarak, bitter)).
