English: Using a wood mortar loaded with dry, fermented cassava flour blended with water and pounded with a pestle to form a dough to be used in the chikwangue (cassava 'bread') recipe. Africa. (Note: to produce cassava flour requires a complex, multi-day soaking, fermenting and drying process before using as shown.)
