Well... Elvin's A Dictionary of Heraldry (p.26) says of the heraldic charge that it is "So called from St. Catherine whom the pagans attempted to put to death by a wheel of this kind." So, I'd look in books about the saints for quotations. Note that the object doesn't have to be real or historically accurate, merely the word has to be used to describe the idea.
