Hi, I don't understand this article. I think the word doesn't exist. The right construction for such french words is the following :

persillade comes from persil+ade

anchoïade comes from anchois+ade

sardinade comes from sardine+ade, and so on...

I think the right word is thonade (which comes from thon+ade). thoïonade is a really bad barbarism.

I'm not sure, one can find a couple of entries on wikibooks so it means the word exists? The dish may be traditional but the word is really new and poorly constructed, it is probably a barbarism.
