Etymology

Through an intermediate *sartaniga, from the metathesis of Late Latin sartāgō, sartāginem (frying pan). Compare Neapolitan sartàjine, Portuguese sertã, Romanesco sartàina, Sardinian sartaghine, Spanish sartén. Cfr., for the morphology, russànija, vurrànija and filìnija.
