As noted in Wiktionary:Etymology_scriptorium/2015/August#Did_kebab_come_from_Persian_or_Arabic.3F, WP has this to say, with reference:
According to w:Sevan Nişanyan, an etymologist of the Turkish language, the word kebab is derived from the Persian word "kabap" meaning "fry". The word was first mentioned in a Turkish script of Kyssa-i Yusuf in 1377, which is the oldest known source where kebab is mentioned as a food. However, he emphasizes that the word has the equivalent meaning of "frying/burning" with "kabābu" in the old w:Akkadian language, and "kbabā/כבבא" in w:Syriac language. Wikipedia misunderstood or misrepresented Nshanyan. --Vahag (talk) 21:00, 24 August 2015 (UTC)Reply
The Wikipedia article orginally said "Arabic", not "Persian". It was changed by an anonymous edit in 2014. I've checked the source and it indeed says "Arabic". I've edited the Wikipedia article accordingly. The source (or the version I have) also doesn't mention Kyssa-i Yusuf. --IamNotU (talk) 03:02, 3 August 2017 (UTC)Reply
