Borrowed from Aramaic סְמִידָא /‎ ܣܡܻܝܕܳܐ (səmīḏā), from Akkadian 𒆠𒅔𒆠𒅔𒄯𒄯 (/⁠samīdu⁠/, a type of fine groats, coarse flour, semolina), related to Akkadian 𒀀𒊏𒄯𒄯 (/⁠samādu⁠/, to grind fine).
