Etymology[edit]

Compound of 刺し (sashi, sticking into, sticking between; slicing, the 連用形 (ren'yōkei, continuative or stem form) of verb 刺す sasu, “to stick into”) +‎ (mi, flesh, meat).[1][2] The use of the verb 刺す (sasu) here to mean slice is irregular, and might be due to the kill connotations of the verb 切る (kiru, to cut, to slice) during the Muromachi period when this word sashimi first appears.

The term 刺身 (sashimi) is more common in eastern Japan, correlating with 作身 (tsukurimi) in western Japan.
