This article seems to lack sourcing. All information I can find online seem to indicate digestible is preferred.

The digestible article page is more fleshed out and sourced, and does not even link back to this page, even though this one seems to indicate that digestible is old-fashioned and that digestable should be preferred.

My browser and word editor mark digestable as an error, but both acceptable digestible.

Google Scholar has 209,000 articles containing digestible vs 4,709 articles containing digestable.
