You cannot find "sourednesses" anywhere. Finding "a souredness" is not enough: I could say "this is a kinder, gentler New York" but that does not make "New York" countable. Please stop doing this :) Equinox 17:53, 6 August 2022 (UTC)Reply

The quotation says “a mellowed souredness” and I’m not attesting its plural until you found the plural form. However, “mellowed souredness” is not a phrase, and I found many different quotations from existing words and plurals.
