Probably from the variant form cârnaț, from a Vulgar Latin root *carnācius or *carnāceus, ultimately from Latin carnis, carō(meat). Compare Megleno-Romanian cărnat, Sicilian carnazzu, Spanish carnaza, carniza, Old Provençal carnaza, Portuguese carnaz.
