hetero- +‎ fermentation

Noun

heterofermentation (plural heterofermentations)

  1. Fermentation that produces two or more different products (typically, alcohol and lactic acid).
    • 1992, Brian J. B. Wood, The Lactic acid bacteria in health and disease:
Other end-products can accumulate, particularly during heterofermentations, and these products also exhibit antagonistic activity.
    • 2004, Y. H. Hui, Handbook of Food and Beverage Fermentation Technology, page 23:
The preservation effect is the result of synthesis of lactic acid and heterofermentation — also, acetic acids and, some times, antimicrobial substances.
