Etymology[edit]
From homophone 会席料理 by substituting kanji; attributed to Sen no Rikyu, 16th century tea master. Equivalent to 懐石 (kaiseki, “simple meal served before a tea ceremony”) + 料理 (ryōri, “cooking, cuisine”).
