crépinette (plural crépinettes)

  1. A small, flattened sausage, sometimes referred to as a sausage parcel. It is round, like a sausage patty, and made from minced or ground meat or even from truffles. Crépinettes are wrapped in caul fat, rather than wrapped in a casing. They are usually cooked with an outer coating of bread and sautéed in butter.
