  1. A kind of pasta similar to gnocchi, but made with ricotta instead of potatoes.

      Ricotta gnudi (ravioli filling without the pasta) are perfumed with marjoram.
    • 2013, Marcy Smothers, Snacks: Adventures in Food, Aisle by Aisle, New York: HarperCollins, p 154:
      Gnudi means “nude” in Italian. Akin to a boiled dumpling, gnudis are skinless. Think ravioli without the pasta.
