    1. the jejunum of an unweaned calf (or, rarely, of a young ox) containing chyme, cut up into short segments with tied up ends, used as food
    2. (cooking) a dish consisting of the above entrail cooked with onion, lard, parsley, and celery, with addition of tomato sauce and white wine (also used as dressing for pasta)
