Etymology

From شَرْمَطَ (šarmaṭa, “to shred”). Most Semitists agree that it is of non-Semitic origin; perhaps from Middle Persian [Book Pahlavi needed] (clm /⁠čarm⁠/, “a piece of skin, hide, or leather”) (see Persian چرم (čarm)), perhaps conflated with Middle Persian [Book Pahlavi needed] (šlm /⁠šarm⁠/, “shame”). Compare Hebrew סְמַרְטוּט (s'martút, “rag”), Aramaic מַרְטוּטָא (marṭūṭā), סְמַרְטוּטָא (səmarṭūṭā, “coarse garment”).

     They make the meat into jerky, which they call “shreds” because they shred it, meaning they cut it into strips. Some of it they also eat undried.
