Probably ultimately derived from Proto-Indo-European *keh₂p- (seize), possibly through a root *kobuǵos (compare Russian ко́бец (kóbec, falcon), Polish kobuz, Latin capys, capus (bird of prey) (if not loaned from Etruscan), Albanian gabonjë).
