From Latin *carnem ligat (literally ties the meat), indicating that meat is forbidden. Compare Romanian cârneleagă. Compare similar formations in carnival, Italian carnevale from *carnem levāre, Lua error in Module:parameters at line 290: Parameter 1 should be a valid language, etymology language or family code; the value "it-oit" is not valid.
