  1. Any of a range of dairy products used in the cuisines of various Middle Eastern, Central Asian and Eurasian cultures:
    1. A thick, whitish liquid (sometimes dried) made from whey, used in Iranian and Kurdish cuisine.
    2. Dried, fermented yoghurt, buttermilk, or cheese, especially when shaped into small balls, consumed in Kyrgyz and Uzbek cuisine.
      Synonyms: qurut, gurt, khuruud
