Not sure exactly. What's interesting is that the Old French conjugated forms of peser consist of pois, poises, poise, etc. My guess is that it may have been analogically altered in Middle French. As for the infinitive... There is a Middle French poiser actually, unless this is a derivative of poix instead (which I doubt)? But this source mentions an Old French poiser as a variant of peser, based on the tonic stem, so the Middle French may have continued from that; same here. So I'm not sure if there were two parallel forms of the verb that later converged, or what. Searching for poiser on the Middle French dictionary directs you to the lemma of peser it seems.
