From dé- +‎ jeûner (un fast (to break fast)) or from a Vulgar Latin *disieiūnāre, *disjejūnāre, from Late Latin ieiūnāre, jejūnāre, present active infinitive of ieiūnō, jejūnō, from Latin ieiūnus, jejūnus. Compare Spanish desayunar, Occitan dejunar. Doublet of dîner from which English dine descended.
