Chinese is not considered a distinct language on Wiktionary. Rather, each individual dialect or variety of Chinese is considered on its own. This category is used for aspects which these languages share, such as characters and romanizations. Anything that belongs to a specific language should go in the category for that language.

For more information, see Wiktionary:About Sinitic languages. For a list of Chinese languages, see Category:Sinitic languages.
