pâté +‎ chinois Being a sort of pie from China, Maine, USA; where French Canadian works arrived to work textile mills in Maine, USA, and were served variations of shepherd's pie, bringing it home, and developing the French-Canadian dish from it. "China" being "Chine" in French; and "chinois" being French for "Chinese".
