From (deprecated template usage) [etyl] Latin (deprecated template usage) capitālis, in sense “head of cattle”. Use in trade and finance originated in Medieval economies when a common but expensive transaction involved trading heads of cattle.

Compare (deprecated template usage) chattel and (deprecated template usage) kind, which also use “cow” to mean “property”.
